Baby Beetroot, Rocket and Feta Salad

Ingredients•60ml White balsamic vinegar
•40g Brown sugar
•30ml Olive oil
•Salt
•Punnet of baby beetroot (10)
•50g Rocket
•120g Feta cheese

Preparation1.Place all the ingredients, except the feta cheese and rocket, in a roasting tin and stir to coat.
2.Cut the beetroot in halves and steam in a steam oven at 100oC for 50 minutes.
3.Set the oven at 185oC.
4.Place steamed beetroot in a roasting pan on the grill and roast for 45 minutes, stirring once or twice to “baste” the mix with the glaze.
5.Remove and allow to cool.
6.Scatter on a plate, top with rocket and feta.
