Preparation1.In a double boiler mix the cream, milk and parmesan cheese. Still until the parmesan cheese has melted. Let the mixture cool completely.
2.Add the egg yolks, cayenne pepper and salt then mix until creamy.
3.Divide the mixture amongst 8 ramekins then place in a oven tray filled with boiling water to create a bain-marie.
4.Bake on fan plus for 15-20 minutes on conventional heat.
5.Serve with Melba toast.
