Roasted cashew, Quinoa & Kale tart

Ingredients1 ½ cups Roasted and salted cashew nuts roughly chopped
½ cup Breadcrumbs
2 cups Quinoa (cooked)
½ Red onion, chopped
2 Garlic cloves, minced
½ cup Chicken stock
¼ bunch Kale
1tbsp Olive oil
2tbsp Tomato paste
1 Egg

Baking

PreparationCook the quinoa according to the instructions on the packet.

Prepare a silicone Bundt pan by spraying it with baking spray of your choice.

Combine the following ingredients in a food processor: Breadcrumbs, Quinoa, Onion, Garlic, egg, olive oil and blend together until combined.

Next add the Kale, chicken stock and tomato paste and blend well.

Scoop the mixture into your Bundt pan and place on a baking tray.

Set your Miele oven on FanPlus at 180C. Let the oven heat up.

Place the tart in the oven and bake for 30 minutes. Once the baking time is up, switch off and let the tart cool in the oven.

Remove, slice and serve.
