Banting Smoked paprika & lemon marinated lamb chops with vegetables

noneIngredientsLamb:
4 Braeside lamb loin chops (or shoulder depending on your choice)
2tsp smoked paprika
1tsp garlic and herb
1 lemon zest and juice
Salt and pepper

Vegetables:
Sugarsnap Peas
Mangetout
Baby Peas
Tenderstem Broccoli
Asparagus
Leeks, sliced
Courgette, cut on the slant
French Fine Green Beans
Or any other green veg that you like.

Sauce:
1 x 400ml Can Coconut Cream
1 Tube Wasabi
2 Green Chilli, finely chopped
1 Green Lime, zest and juice
Handful chopped Coriander
1tsp Braeside raw honey

PreparationLamb:
Spread the spices over the chops evenly and leave to marinate for an hour or overnight. Add salt just before searing. Remove the chops from the fridge at least 30min before searing.

Vegetables and sauce:
Place all ingredients, except for Coriander, in a saucepan over a medium to high heat. Simmer until reduced and thick. Just before adding to the vegetable stir in chopped coriander.

While the sauce is thickening, steam the vegetables until al dente or still crisp.
The use of a Miele team oven is ideal for this.

While the vegetables are getting done, braai your lamb chops until medium rare. About 5mins a side on a
medium braai. You can also grill them in the oven.
