Soften the onion in 50ml of the coconut oil Add the sweet potato and cook until softened Add smoked paprika and cook for a minute Add the cauliflower, brussel sprouts and bacon, if using, and cook for a further 8minutes Keep pressing down on the mixture wIngredients½ cup coconut oil
1 medium onion
200g grated sweet potato
100g cauliflower florets and sliced brussel sprouts (or any left-over veg you may have)
125g crispy Braeside bacon (optional)
2 duck eggs from Braeside
½ tsp smoked paprika (use the hot version if you like spice)

PreparationSoften the onion in 50ml of the coconut oil

Add the cauliflower, brussel sprouts and bacon, if using, and cook for a further 8minutes
Keep pressing down on the mixture with a potato masher or a wooden spoon to keep compact.
When the edges start to brown, turn the mixture and cook for a further few minutes
When done, remove onto a warm plate
Warm the remaining coconut oil in a pan and add the ducks eggs
Cook as desired (duck eggs take surprisingly longer than chicken eggs)
Cut the bubble and squeak in half and side onto two plates
Top the bubble and squeak with the eggs and enjoy
